The basic ingredients: The ingredients that you’ll need for this recipe: You’ll need: Two medium-sized eggs 1 medium onion, diced 3 cloves of garlic, minced 2 tablespoons olive oil 1 tablespoon salt 1 teaspoon pepper 1/2 teaspoon ground cumin 1 cup water 4 tablespoons chopped parsley, plus more for garnish Optional toppings: Chopped tomatoes, diced avocado, shaved cucumber, scallions, avocado flakes The method: Put all of the ingredients in a large pot and bring to a boil.
After boiling, turn the heat down to medium-low and simmer for 5 minutes.
Stir the eggs and onions around the edges and stir until they are combined.
Add the garlic, oil, salt and pepper, then cook for 2 minutes.
Add the water and tomatoes, stir until well combined.
Add the parsley and mix well.
Bring to a simmer, then lower the heat and simmer until the mixture starts to thicken.
If the sauce starts to become too thick, add a little more water.
Once the sauce has thickened, remove the heat from the heat, add the parsleys and mix again.
Serve hot with rice.
